We are now selling Jersey rock oysters, both at Borough Market and via our online shop. They are not as punchy in flavour as the Mersea rock oyster and we know that some people prefer this slightly more subtle taste and texture of the Jersey oyster.
The Jersey rocks are less salty and have a more minerally flavour profile because of the rocky/sandy coastline where they grow.
