
Can't decide which oysters to get? Why not get a mix of our wild caught Mersea rock oysters and some Jersey rock oysters. They have different textures and flavours but they complement one another perfectly.
Our wild Mersea rocks have a high salinity offset by an earthiness from the local marsh grasses which feed the creeks where they grow. They have a punchy long finish.
The Jersey rocks are less salty and have a more minerally flavour profile because of the rocky/sandy coastline where they grow.
