The seasonal Native oyster (ostrea edulis) is native to North-West Europe. The shell is fairly flat and almost round in shape, and the meat a delicate and beautiful taste. The Mersea Native was recently awarded Presidia status by the Slow Food movement. This award aims to protect the Native through sustainable farming, and care for the local environment, highlighting this oyster’s exemplary quality.
